CAP CLASSIQUE

Magnum Selection Brut 2014 – 1500ml

Our Brut Réserve 2014 is made up of Chardonnay 86% and Pinot Noir 14. It is a sophisticated nose and palate with subtle notes of biscuit and brioche. Delicate and gentle bubbles with a fresh citrus finish. After secondary fermentation, our Magnums spend a minimum of 60 months on the lees before de-gorgement. Magnums are lighter and more vibrant upon release, due to their size during fermentation. This makes them ideal for cellar ageing after release. Magnums are especially better suited to longer bottle ageing, maintaining its freshness while becoming more integrated over time.

In our search for the finest grapes, we carefully select vineyards that express unique terroir characteristics. We blend these terroirs to create the distinctive Le Lude Reserve style.

Our grapes are hand harvested in shallow picking crates to prevent berry bruising. Early morning harvests ensure the grapes remain cold when picked. The grapes are transported in refrigerated trucks to the cellar, offloaded and packed in a cold room to reach 5°C before pressing starts.

The juice is settled for three days before it is racked off the sediment. The clean juice is inoculated with yeast and undergoes a cool fermentation. No lees contact is given post fermentation and malolactic fermentation is avoided.

Once we have our final still base wines, continuous blending trials and tastings will determine our Brut Reserve style. Careful consideration is made to produce an elegant wine with structure and length.

The Le Lude Reserve range undergoes secondary fermentation under crown cap in bottle, and is then aged Sur Lie , on the lees, in our dark temperature-controlled caves for a minimum period of 36 months before being disgorged. At disgorgement, a specific dosage of sugar is added to balance the palette of the wine.

The Brut Reserve is further aged in bottle before it is released.

The pearl of bubbles is soft and lingering, with only a slight yellowed hue to the colour. On the nose you can pick up white blossom perfume, quince and orange peel. The palate is complex and of proving dough and lemon tart, with fresh acidity and a lingering minerality.
