The grapes are hand harvested early in the morning and packed into shallow picking crates. Maximum 2 bunches deep. The grapes are stored in the cold room to reduce core berry temperature before pressing. The grapes are loaded for whole bunch pressing. Three fractions are selected at pressing; Cuvée – high quality free run juice, Première Taille – first extraction, Deuxieme Taille – 2nd extraction. The juice is settled then racked. The clean juice goes through a cool fermentation. A small fraction is fermented in 2nd – 4th ll barrels and the large majority is fermented in temperature controlled stainless steel tanks. No lees contact is given post fermentation and malolactic fermentation is avoided.
Magnum Selection Rosé 2014 – 1500ml
The Rosé Magnum is a blend of 27% Chardonnay, 68% Pinot Noir and 5% Pinot Meunier. It undergoes traditional cork fermentation and maturation on cork 36 months. Premium corks are specially imported for this wine. Available for purchase exclusively from our Cellar Door. Magnums are especially better suited to longer bottle ageing, maintaining its freshness while becoming more integrated over time.
The Pinot Noir shows depth ad richness in this blend. Tertiary development aromas of baked raspberry pie, ripe cherries along with the freshness of white peaches and citrus. The entry is brisk, softly textured with linear acidity as structure, this shows great ageabillity for this beautifully structured blend. The mousse shows elegance and persistence with creamy texture to the bubble.
