A symbol of perfection, finesse and allure, the Le Lude Venus is named after the most beautiful and desirable goddess of all the Roman deities. Only Cuveé, high quality free run juice, is used in the Vintage blend.
A small fraction of the Chardonnay portion is fermented in third or fourth fill French oak barrels, and the majority in temperature controlled stainless steel tanks. No lees contact is given after fermentation and malolactic fermentation is prevented. The final blend is made up from various parcels that were kept separate throughout production, allowing for unique terroir characteristics to be expressed within the blend.
Secondary fermentation of the Venus Magnum happens under crown cap in the bottle in temperature-controlled caves. The fermentation can take up to three weeks to complete, after which the wine will lie undisturbed on the lees, also known as sur lie ageing. During ageing, the yeast hulls start to dissolve and impart typical yeasty flavours to the wine, increasing the complexity and richness. The bubble becomes finer and the aromatics more delicate.
No sugar is added at dosage as there is balance between the fruit, yeasty characters, and refreshing acidity.
Limited quantities of this wine are released.
Magnums are especially better suited to longer bottle ageing, maintaining their freshness while becoming more integrated over time.
