At Le Lude the process begins with the meticulous handpicking of Mission and Kalamata olives. Nestled amidst scenic landscapes, these olives thrive under the estate sun. Once the olives are harvested, they embark on a journey of transformation, evolving from simple fruit to liquid gold. The first step involves washing the olives, removing any impurities that may have clung to their skin. This pristine preparation sets the stage for what’s to come.  
 
Crushing the olives is the next step, where the fruits are gently broken down to form a paste.  The paste is then slowly mixed, a careful choreography that coaxes the oil out from its botanical enclave. The decanter gently separates the oil from the rest of the paste. The result is a pure, unadulterated expression of the olives’ essence – a testament to the commitment to quality.
